Zucchini

We have zucchini coming out of our ears. I am DONE WITH ZUCCHINI! What is left to make? Seriously help me out here. So far we have done:

Sauteed zucchini
baked zucchini
Zucchini soup
Zucchini bread
Fried zucchini
Chocolate chip zucchini cake
Zucchini pancakes
Salad with zucchini in it

I am afraid the boys and I are going to turn in zucchinis. What else can we do with it, short of letting them grow and carving them for Halloween?

Here's a great no-fail recipe that doesn't taste like zucchini. My kids love it, especially the three year old. It's great cut into small slices and eaten cold.

Sorry I'm from Australia so you'll have to change the grams to ounces.

Impossible Zucchini Slice

375g Zucchini
1 large onion (I always leave out and the recipe still works)
1 C grated cheddar cheese
1 C self-raising flour
1/2 C oil
5 eggs
salt and pepper

Grate zucchini
Finely chop onion, combine all ingredients. Bake in 20cm X 20cm approximate dish for 30-40 minutes at 180 degrees C (moderate oven)

I boiled up some zucchini and pureed it. I added it to garlic mashed potatoes and it was really good. If it weren't for the faint green color (Honey called them shamrock potatoes), we wouldn't have really known a difference....except they were a little thinner than regular mashed potatoes. I also add pureed zucchini to my spaghetti sauce. I keep containers of pureed zucchini in my freezer and add it to whatever catches my fancy.

I was going to say freeze it..you are so funny! freeze it for later recipes..I wish we lived closer I would take some off your hands..deffinatly freeze it though..good luck...
